Ingredients

  • 3 cups all-purpose flour (or bread flour)
  • 1 teaspoon instant yeast
  • 1 ½ teaspoons salt
  • 1 ¼ cups water (room temperature)
  • 2 tablespoons olive oil
  • 1 ½ teaspoons Italian seasoning (oregano, basil, thyme)
  • 1 cup shredded cheese (parmesan, mozzarella, or a mix)

 

  • Optional: 2 cloves garlic (minced), ½ teaspoon red pepper flakes, ½ cup sun-dried tomatoes (chopped)

Instructions

  • In a large mixing bowl, whisk together the flour, yeast, and salt.
  • Add the water and olive oil to the dry ingredients. Stir until the dough comes together, then add the Italian seasoning and cheese.
  • Cover the bowl with a damp cloth or plastic wrap and let the dough rise at room temperature for 12-18 hours.
  • After the rise, turn the dough onto a lightly floured surface and fold the edges into the center to form a rough ball.
  • Preheat your oven to 450°F (230°C). Place a Dutch oven or heavy pot inside to heat up.
  • Carefully transfer the dough into the hot pot. Score the top with a sharp knife if desired.
  • Cover the pot with a lid and bake for 30 minutes.
  • Uncover the pot and bake for an additional 15-20 minutes, or until golden brown.

 

  • Remove from the oven and let cool on a rack for at least 15 minutes before slicing.

Notes

  • You can substitute some of the all-purpose flour with whole wheat flour for a heartier loaf.
  • Feel free to experiment with different herbs and cheese blends to suit your tastes.

 

  • To store, keep the bread at room temperature in a paper bag or bread box for up to 3 days. For longer storage, freeze individual slices.
